Crispy Noodles Bhel

A chinese "bhel" topped with fried noodles, a dish which never fails at parties. Be sure that the noodles are absolutely crisp.

Ingredients

450 gms cabbage , cut into thin strips
3 onions , sliced
100 gms bean sprouts
10 french beans , cut into thin strips
2 carrot , cut into thin strips
3/4 cup boiled noodles
1 1/2 cups fried noodles
4 tsp oil
1 tsp chilli sauce
salt to taste

For The Sauce
1/2 cup brown vinegar
1/2 cup sugar
3/4 cup water
2 tbsp plain flour (maida)
1 tbsp soy sauce
4 tbsp tomato ketchup

Method
1.Combine all the ingredients for the sauce in a pan, mix well and bring to a boil. Cook until the sauce is thick. Keep aside.
2.Heat the oil in another pan and add the vegetables and ajinomoto. Stir fry over a high flame for 3 to 4 minutes.
3.Add the prepared sauce, noodles, chilli sauce and salt and cook for a few minutes.
4.Add half of the fried noodles and mix well.
5.Serve hot, topped with the remaining fried noodles.

Nobody knows why it is called American Chopsuey, but it is one of the most common recipe on the Chinese restaurants in India. American Chopsuey is basically a stir fry vegetables sautéed in sauce served over crispy noodles. There are many Indian version or inspiration of popular Chinese food served within borders of India.
So far I have found American chopsuey served in only Indian restaurants but not in America. I wonder where the name comes from. Anyway for those of you who love this dish, here is the preparation.
